What’s better than a cookie? A cookie bar with a graham cracker layer and a sweet, gooey layer in between! Top it all with your favorite chocolate candies or chocolate chips and it’s absolutely irresistible!
Lately my kids have been begging for cookies nonstop. I think they take after me. 🙂 I’ve made my favorite chocolate chip cookies and Snickerdoodle Cookies at least a handful of times over the last little bit. I don’t think I could ever tire of those, but, with Easter coming, I thought it would be fun to incorporate some yummy mini Cadbury Eggs (probably my most favorite Easter candy ever) into a yummy cookie dessert. I love cookies in bar form because they’re so much easier and just as yummy!
This time, rather than creating the typical cookie bar, I decided to mix things up a little and add a graham cracker layer on the bottom and then pour sweetened condensed milk over that for a gooey, caramel-y center that will have you yearning for more! My family and I are pretty much crazy about these and I think you will be too!
What are your Easter plans? I know it’s still a bit away since it’s a little later this year, but we are already putting together our annual Easter egg hunt and the kids can’t stop talking about what might be in their Easter baskets.
We typically keep things super simple as far as Easter baskets go. I’ve learned not to over-do it on the candy. Otherwise, I end up eating it all myself or letting it go to waste (which is such a shame!). I like to include a new spring outfit for each of the kids, along with a reasonable amount of candy and then a new swimsuit. Sometimes I’ll throw in some bubbles or sidewalk chalk, because I like to encourage my kiddos to get outside and enjoy the sun that is finally starting to shine again!
Easter candy has always been my favorite! I get giddy when I see it hit the store shelves. And then I stock up on mini Cadbury Eggs like they’re going out of style. What’s your favorite kind of Easter candy? I also love the mini Reese’s Pieces Eggs. So good! What I love about these cookie bars is that you can incorporate any kind of your favorite chocolate candy on top. Plus, you can tailor these to any holiday or just to everyday!
I think those pastel milk chocolate eggs are so pretty! But, no matter how you choose to serve them, these bars are so soft and incredibly scrumptious! Everyone will be wild about them!
Cookie Magic Bars
Ingredients
- Graham Cracker Layer:
- 2 c. graham cracker crumbs
- 1 Tbsp. sugar
- 5 Tbsp. butter melted
- 1/2 can 7 oz. SWEETENED condensed milk
- Cookie Dough Layer:
- 3/4 c. butter softened
- 1/4 c. granulated sugar
- 3/4 c. brown sugar
- 1 1/2 tsp. vanilla extract
- 2 large eggs
- 2 1/4 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/4 c. mini Cadbury eggs your favorite chocolate candy, or chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit. Line a 9x13" pan with parchment paper so it hangs over the sides.
- Stir together graham cracker crumbs, 1 Tbsp. sugar and 5 Tbsp. melted butter in a bowl and press into prepared parchment-lined pan.
- Pour 1/2 can sweetened condensed milk over graham cracker layer and place in the oven to bake for 7 minutes. While that is baking and then cooling a little bit, make the cookie layer.
- In the bowl of an electric mixer, cream together softened butter, granulated sugar, brown sugar, vanilla and eggs. In a separate bowl, stir together flour, baking soda and salt. Add dry mixture to the wet mixture and mix until incorporated.
- The graham cracker crust will break up if you try to spread or press the cookie dough portion on top, so instead, take chunks of the cookie dough and press them flat in your hands, then carefully lay them on the top of the graham cracker layer, piecing them together as best you can, until all the dough is gone.
- Press chocolate candies into the dough on top and return the pan to the oven to bake for approximately 13-15 minutes, or just until done (the edges will be barely starting to turn slightly golden in color.) Be careful not to over bake!
- Let cool completely, slice and serve. Enjoy!
