If you’re a peanut butter and chocolate lover, you need to bolt to the kitchen and make these Ultimate Peanut Butter Bars! A peanut butter cookie base topped with layers of melted white chocolate and semi-sweet chocolate. These are utterly divine!

I think peanut butter and chocolate is one of the best flavor combos out there. You just can’t go wrong when you put peanut butter and chocolate together, especially in cookie bar form. I love these Lunch Lady Peanut Butter Bars so much! But I wanted to switch them up a little bit because I needed to update the photos and also because I wanted to throw some white chocolate in, because it’s delicious!
My kids couldn’t stop eating these and neither could I! I definitely got my chocolate peanut butter fix with these delightful cookie bars! I know you’re going to love them too!

The kids are almost done with the school year and are feeling anxious for summer break. I can’t wait to spend summer days with them, swimming, biking, picnicking and just having fun in the sun! We have some trips planned that we are looking forward to, and the kids can’t wait to see their cousins. I love summer time, don’t you?
The mornings are still pretty cold here, but the daytime temperature tells me that it is indeed spring and summer is on the way. And my flowers are blooming in my garden! I love all the beautiful, happy pastel blooms.

Whenever the weather warms up, I start thinking about my favorite summer time foods like these Luscious Lemon Bars and this No Bake Lemon Raspberry Cheesecake and these Strawberry Cake Mix Cookies. They all just scream “summertime and sunshine!”. I think about potlucks and gatherings and time with friends and family outdoors. These Ultimate Peanut Butter Bars make a ton and would be perfect for all of these occasions!
I can’t think of a dessert more perfect for a summer picnic or backyard BBQ with friends than these Ultimate Peanut Butter Bars. You’ll love the white and semi-sweet chocolate layers! You could always sub in milk chocolate for the semi-sweet, if you’d prefer.

Ultimate Peanut Butter Bars
Ingredients
- 1 c. salted butter softened to room temperature
- 1 c. sugar
- 1 c. light brown sugar packed
- 2 large eggs
- 1 c. peanut butter smooth and creamy
- 2 tsp. vanilla extract
- 1 tsp. baking soda
- 1 tsp. salt
- 2 c. all-purpose flour
- 2 c. oatmeal old fashioned oats
- 2 c. white chocolate chips
- 2 c. semi-sweet chocolate chips sub in milk chocolate, if you'd like
Instructions
- Preheat the oven to 350 degrees Fahrenheit and lightly grease a half-sized baking sheet pan (18"x13").
- In the bowl of an electric mixer, cream together butter and sugars. Add eggs, peanut butter, and vanilla and mix until incorporated. Add in baking soda, salt, flour and oatmeal and mix just until incorporated.
- Press dough evenly into prepared pan and bake for 12-15 min. Check it at 10 minutes and every minute after that until they're set, so they don't over bake.
- Allow them to cool to room temperature, then melt the white chocolate chips and spread over. I melted mine in the microwave in 30 second increments, stirring in between.
- Place bars in the fridge for a few minutes so the white chocolate can quickly set up. Then melt the semi-sweet chocolate chips and spread over the white chocolate layer that has set. Allow the chocolate to set completely.
- Slice into squares and serve.
I love making a big sheet pan of cookie bars. It’s so much easier than rolling out cookie dough balls and baking them separately! You’ll love how simple these are to make and how phenomenal they taste!
