My kids are done with school, so summer has official begun for us! I love it! When it’s hot, my desire to cook fades, so I rely on easy meals on a nightly basis. We grill a lot. Skillet meals, as well as breakfast for dinner and instant pot and crockpot meals are great go-to options. I hope you have a wonderful summer filled with delightful food!
Here’s what we ate for dinner last week:
Chicken Taquitos. These are so easy when you use rotisserie chicken or canned chicken like I do. It makes for a fuss-free meal!
Cajun Shrimp Skewers. We grilled these up for Memorial Day. They are so flavorful and scrumptious!
Hot Dogs. We went camping, so it had to be easy! Camp fires were restricted, so we cooked them up on our little propane grill.
Pulled Pork Sandwiches. We have a new Traeger Grill, so we’ve been working it to the max! So far pulled pork is our favorite! I love it because it makes a ton and we can portion it out into bags, freeze, then thaw for an easy dinner!
Rob’s Rice. This is a Sunday dinner favorite!
