Cheesy Ham and Rice Casserole

This Cheesy Ham and Rice Casserole is sure to please the whole family! It’s comforting, delicious and so easy to make!

Lately, I’ve been relying on meals that can be made in 30 minutes or less with just a few ingredients. Evening time can be so hectic! We always seem to be running here and there.

But, I’ve said before that getting my family around the dinner table, no matter how busy we are, is important to me. I believe there is something to be said for a warm, home-cooked meal that everyone can enjoy together while talking about their day.

The meal certainly doesn’t need to be complicated or fancy to evoke these feelings and memories. I’ve been coming up with ways to simplify dinner, yet keep it yummy! Today’s recipe is just that-so easy to throw on the table and is sure to bring smiles all around!

It starts with some pre-packaged cheesy broccoli rice mixes, (the ones my family begs for). Then, add in some fried ham chunks and fresh broccoli pieces to make it filling and so flavorful!  Finish it off with some yummy cheddar cheese! Bake it until it’s warmed through, then dig in!

My picky kids went crazy for it! And I felt like super mom for being able to put a scrumptious meal on the table after tackling laundry, errands, cleaning, and kids’ activities all day. And I didn’t even break a sweat!

Cheesy Ham and Rice Casserole

Ingredients
  

  • 2 pkgs 5.7 oz. each Knorr Rice Sides Cheddar Broccoli Rice and Pasta Blend with Broccoli in a Cheesy Cheddar Sauce
  • 1 heaping c. chopped broccoli chop into small pieces
  • 2 c. diced cooked ham
  • 1 1/2 c. shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit.
  • Prepare rice mixes according to package directions, except stir in the chopped broccoli while it cooks.
  • Fry the ham pieces in a skillet over medium heat, turning with a spatula frequently, so it doesn't burn.
  • After the rice is done, stir in the ham pieces, then pour into an 8"x8" casserole dish and sprinkle with shredded cheddar cheese.
  • Bake until warmed through and cheese is melty, about 20-25 minutes.
