Death by Chocolate Cookie Bars

Oh my goodness…can I just start by saying how AMAZING these Death by Chocolate Cookie Bars are?
They’re a chocoholic’s best friend, which means we didn’t even need to be introduced or break the ice before I indulged in a few too many.  Soft, chewy and out-of-this-world chocolate-y, they met my expectations and more.  With a chocolate pudding packet, baker’s cocoa, and oodles of chocolate chips and chunks, these bars are not short on the good stuff.  They mean serious business.
In fact, they’re almost too good for children.  I wanted to hide in the closet where no one could find me, and let these delectable bars take me away to chocolate heaven.  Yes, I’m proud to admit that I’m a hard core chocolate hoarder.  I very reluctantly handed a few squares over to my kiddos, but with a warning that if they wasted but a crumb, there would be consequences.  🙂
White chocolate chips, large chocolate chunks, and a chocolate cookie dough base make these bars a winning snack, dessert, breakfast of champions….you name it.  I wouldn’t be opposed to breaking them out for dinner as well.  Nutrients are totally overrated, am I right? 🙂
These beauties came about because of a beloved Chewy Brownie Cookies recipe of mine.  I was craving a chocolate cookie, but in bar form, and it had to be soft.  So a new favorite bar recipe was born.  I’d say the texture represents a perfect marriage between a brownie and a cookie.  I will be making these again and again.  I’m looking for an excuse to put some in the oven right now.
Take my advice and bolt to the kitchen, whip out the ingredients and bake up a batch faster than you can say “Bob’s your uncle”, because these suckers are GOOD!!
 If I had to die and go to heaven at this very moment, I’d hope the last experience I had was partaking of these…with my wonderful family by my side, of course.
{DEATH BY CHOCOLATE COOKIE BARS}
1 c. (2 sticks) butter, softened
1 c. light brown sugar, packed
1 pkg (3.9 oz.) chocolate instant pudding and pie filling (dry, unprepared)
2 large eggs
1 tsp. vanilla
2 1/2 c. flour
1/4 c. baking cocoa
1 tsp. baking soda
1/4 tsp. salt
3/4 c. white chocolate chips + 1/2 c. for topping
3/4 c. semi-sweet chocolate chunks + 1/2 c. for topping
Preheat oven to 350 degrees Fahrenheit.  Prepare a 9×13 pan by lining with parchment paper or lightly spraying with cooking spray.  Cream together butter, brown sugar, pudding packet, eggs, and vanilla until mixture turns light in color.  In a separate bowl, stir together flour, baking cocoa, soda, and salt.  Add flour mixture to wet mixture and mix until combined.  Stir in 3/4 c. white chocolate chips and 3/4 c. chocolate chunks by hand.  Press dough mixture onto the bottom of prepared pan, lightly press remaining white chocolate chips and chocolate chunks onto the top and bake for approximately 15 minutes.  Don’t over bake or they will not be soft and chewy!

My husband always has dibs on the edges, but I personally don’t care either way, as long as I get a piece or three. 🙂

    Tastes amazing. Not WAY too sweet. I cooked mine for 17 mins because my family prefers soft but not gooey. I will totally be making these again.
