Fudgy Chocolate Mint Cookies

The Christmas season is here! Celebrate with some delightful Fudgy Chocolate Mint Cookies! You won’t regret adding these to your holiday baking list!

I love this time of year! We decked our halls and set up the tree and garland. We’ve been blasting the festive tunes since before Thanksgiving, as usual. I just can’t get enough of the joyful music and warm, happy memories that happen at the year end.

My family has lots of fun plans to make the season even more magical. A few of those plans include trips to see the lights in the surrounding towns, a festival of Christmas trees and gingerbread houses, a Christmas Around the World dance festival, and a Christmas music recital. I can’t wait to start my holiday baking! That’s always one of my most favorite parts about this season. 

Top of the “must bake” list are these Fudgy Chocolate Mint Cookies! The dough really looks like you made a batch of fudge and the taste is out-of-this-world incredible! If chocolate mint fudge became a cookie, this would be it. The chocolate mint fudge baking chips give it a flavor profile that is absolutely unbeatable, and totally phenomenal! Speaking of must-bake cookies, I can’t wait to whip up a batch of these White Chocolate Cranberry Cookies from The Food Charlatan!

You could choose to melt the baking chips and then spread them on top, if you’d like, but I think they’re so pretty in whole chip form! Make these before Santa comes to town and leave them by the tree. He’ll tell all his elves and reindeer that you are the absolute best ever! 🙂 Give these to neighbors and friends on goodie plates and they’ll be looking forward to them every Christmas from here on out.

When I think of flavors that remind me of Christmas, mint is definitely one of them. I love that mint is green too, to make it even more festive for the holidays. I know these would be Grinch approved! Even the grumpiest of holiday Who’s will admit that these cookies are top-notch amazing! I’m positive you’ll love them too!

One of our favorite things to do as a family in December is to bundle up and deliver cookies to our neighbors and friends. I love baking up a storm the days leading up to this delivery. Here are some of my most favorite cookies to include on the goodie plate (you can’t go wrong with any of these!):

Yields Makes about 28 cookies

Fudgy Chocolate Mint Cookies

Ingredients

  • 3/4 c. salted butter
  • 1 1/2 c. brown sugar
  • 2 Tbsp. water
  • 1 tsp. vanilla
  • 1 c. semi-sweet chocolate chips
  • 3/4 c. mint fudge baking chunks (mine were Great Value brand)
  • 2 large eggs
  • 2 1/2 c. all-purpose flour
  • 1 1/4 tsp. baking soda
  • 1/2 tsp. salt

Instructions

  1. In a saucepan over medium heat, cook the brown sugar, butter and water, stirring occasionally until melted. Remove from heat, stir in the vanilla, chocolate chips and mint fudge baking chunks until melted and set aside to cool for 10 minutes.
  2. Pour the chocolate mixture into a large mixing bowl, and, with an electric mixer, beat in the eggs, one at a time. In a separate bowl, whisk together the flour, baking soda and salt. Mix the flour mixture into the chocolate mixture.
  3. Cover and refrigerate the dough for at least 1 hour.
  4. Preheat the oven to 350 degrees Fahrenheit. Grease cookie sheets or line them with non-stick baking mats.
  5. Roll cookie dough into walnut sized balls and place at least 2 inches apart on the prepared cookie sheets.
  6. Bake for 8 to 10 minutes (mine were done in 8) in the preheated oven. Be careful not to overbake.
  7. Right when cookies come out of the oven, press mint fudge baking chunks lightly into the tops so they will stay put. Let the cookies cool completely and then store them in an airtight container.
