Key Lime Pie Popcorn: April Mystery Dish

It’s time for some more Mystery Dish fun with this gooey Key Lime Pie Popcorn!  All the amazing flavors of Key Lime Pie…in a melt-in-your-mouth popcorn form!  Holy yummy!

 

And while we’re on the topic of yummy, Jen @ Yummy. Healthy. Easy was this month’s host and she came up with a winner list of ingredients:
garbanzo beans
eggs
flaxseed
cilantro
potatoes (any variety)
bread
quinoa
lime
popcorn
dark chocolate
ground turkey
asparagus
We were asked to use two.   A few very different recipe ideas came to my mind at first glance of this list.  I was actually going to make something other than a dessert.  Can you believe it? Ha!  But in the end, my sweet tooth again won out and so Key Lime Pie Popcorn was born.  Lucky us!

The warmer weather always makes my palate eager for citrus!  How about you?  It’s just so light and fresh.  Makes me excited for summer!  This popcorn incorporates a yummy lime “zing” balanced perfectly by sweetened condensed milk, melted marshmallows, graham cracker chunks, and a white chocolate drizzle.  Key Lime Pie is just meant to be enjoyed in popcorn fashion! I mean, really, who could say no to this?
I certainly can’t.  In fact, I’d love to dive in right now.   Mmmmmmm!  Yeah!It’s so easy to make!

{KEY LIME PIE POPCORN}
10 c. popped popcorn
Scant 1/2 pkg. (3 oz.) lime gelatin (dry from the packet)
1 Tbsp. freshly squeezed key lime juice (or regular lime juice)
2 c. mini white marshmallows
1 can (14 oz.) sweetened condensed milk
2 c. graham crackers, coarsely chopped
1/2 c. white chocolate chips, melted (or as much as you’d like for drizzling)
Pop popcorn and set aside.  Combine gelatin, mini marshmallows, and sweetened condensed milk in a saucepan and stir continuously over medium-low heat until marshmallows are melted and mixture is smooth.  Immediately stir in key lime juice.  Pour over popcorn and toss lightly until all popcorn is mostly coated.  Add in graham cracker chunks and toss lightly until all ingredients are incorporated.  Drizzle white chocolate over the top.  Store in an air-tight container.

 

Beware…it’s ooey goey….just what my Dr. ordered!  But if you’d like it to be less so, just add in more popcorn, until it strikes your fancy.
