Kids and adults will enjoy these cheese, marinara sauce, and mini-pepperoni-filled rolls! They look like a typical dinner bread, but have a yummy, warm surprise inside! They’re the perfect appetizer, potluck dish, or easy lunch!

We had kind of a crazy schedule the last week of school before Christmas break. The kids were having class parties and we somehow were assigned to bring some major items this time around. I usually pull out their reminder slips to see that we need to grab a bag of candy or baby carrots to contribute, but this time it was the “main dish” and unfrosted sugar cookies for an entire class.
We had a bunch of other things going on that same week, along with a music recital that I was hosting and a major church activity that I was in charge of. I was talking to my mom and she was like, “Did you know you can buy sugar cookies unfrosted?”
And I was thinking.
When did this happen?
And…seriously?
Have I been living under a rock all these years?
Sometimes I get caught up in this “homemade” craze and forget that we live in a society that caters to convenience. 🙂
So I was planning on just grabbing some at the grocery store, but then the guilty mom syndrome kicked in and I knew it was the perfect opportunity to bond with my kiddos in the kitchen while they helped roll out and cut the dough into Christmas tree, star, snow man, and candy cane shapes. It ended up being a great time, and I was super glad I made them by hand with love rather than taking the easy way out this time.
But, taking the easy way out is not always a bad thing.
I mean, these pizza rolls look like they take a great deal of effort, but, in reality, they are semi-homemade, and come together in a jiff! You’ll feel like you’re “cheating”, but everyone will still be crazily impressed with your culinary skills! Ha!
And, the wonderful thing about them is that they still taste homemade! Right out of the oven, they melt in your mouth. They’re a piece of pizza heaven!
So I loaded a basket with some fresh-out-of-the-oven pizza rolls and dropped them off at my daughter’s school class for their holiday party and the kids almost attacked me to get to the goods. I was pretty much super mom in the eyes of those third graders. 🙂
Needless to say, the basket came home empty.
My kindergarten-aged son literally threw a tantrum in the car on the way home when he found out we hadn’t saved him any.
{PIZZA BOMBS}
Frozen, prepackaged dinner rolls, thawed but not risen (I used Rhodes’ Rolls)
1 jar of your favorite pizza sauce, or homemade (we like Classico Fire Roasted)
Shredded Mozzarella Cheese
Mini Pepperonis
Melted butter for brushing on top (optional)
Parmesan Cheese for garnish (optional)
Allow your frozen dinner rolls to thaw, but not raise too much. Keeping them on a nonstick baking mat or cookie sheet sprayed with nonstick spray, smash each dough ball flat and use your hands to spread the dough out a little bit. Place a teaspoon of pizza sauce in the center (don’t overdo it or they’ll be soggy), then a heaping teaspoon of cheese followed by a teaspoon of mini pepperonis. Wrap the dough completely around the filling, being careful to keep the outer edges dry, and pinch the seams tightly together. Place seam side down on the sheet. Bake at 350 degrees Fahrenheit for 15 to 20 minutes, or until golden brown on top and not doughy. Immediately after removing them from the oven, brush them with melted butter or just grab a slice of butter and smear it on them. Sprinkle with parmesan cheese and serve warm.
These are totally tantrum-worthy. They’re just that good. And so simple to make that it’s almost too good to be true!
We’ll be enjoying them regularly around here, for sure! They’re a no-fail, totally kid-friendly food that adults can’t resist too!
