I am by no means an expert cake decorator. Quite the contrary. But my kids always request fun-themed cakes for their birthdays. Because I’d much rather spend the special day playing with my kids than slaving away over a cake that will be rapidly devoured, and since I’m not a fan of the taste of store-bought cakes, I always opt to make my own from scratch. Then I try to find the simplest way to incorporate the theme to please the birthday child. 🙂
I’ve seen “cupcake cakes” all over the place and decided to make my own since my kids love cupcakes.
My son LOVES Thomas the Train and begged for a train cake for his third birthday, so here’s what I came up with. I made my Chocolate Buttermilk Cupcakes and a double batch of Chocolate Buttercream Frosting, then arranged the cupcakes in a 6×4 rectangle and gave them a thick coating of icing. Then I piped two thick lines of frosting and placed individual Kit Kats over the top for railroad ties. I finished it off with a cheap toy Thomas Train. My son was ecstatic, and I was delighted to so easily please him. 🙂
