Spooky Spider Dip

Serve up these individual Spooky Spider Dips at the Halloween party for a fun and yummy appetizer! They’re sure to scare up some screams of delight!

It’s Halloween time, my favorite time of the year! The kiddos are getting geared up to don the costumes and head out trick-or-treating. Everyone is taking trips to the pumpkin patch and carving jack-o-lanterns. Parties galore are happening. I love it all!

I always get a kick out of serving up creepy-cute appetizers when I host a Halloween bash. They have such an effect on the party goers and make it so much more fun! I mean, who could turn down these adorable spidery mini guacamole dips? I dare you to try them!

Spiders in real life give me the heebie jeebies, but these ones make me want to grab the chips and dig in! They’re so easy to put together, using hollowed out avocado halves, orange bell peppers for legs and olive slices for the eyes. And the filling is oh-so-incredible, thanks to RO*TEL® Original Diced Tomatoes and Green Chilies!

I love a good guacamole and this one is out-of-this-world delightful! It’s chunky and hearty with a perfect amount of zest from the lime juice and RO*TEL® Original Diced Tomatoes and Green Chilies! I love using these because they add a little kick to my dips and lots of bold flavor!

I put together a big platter full of spider dips in no time, then surrounded them with chips for easy dipping! The pepper strips are fun to dip too! I love that it’s all edible and so, so yummy! The little ghosts and goblins are going to go wild for it!

I grabbed everything I needed for today’s recipe at Walmart.

These would be a perfect addition to a themed Halloween dinner before heading out to fill those treat buckets! We have a tradition at our house of enjoying festive foods the evening of the spooky day. The kids really look forward to it.

Here’s a quick photo tutorial on how to put them together:

Start by pouring in two cans of  RO*TEL® Original Diced Tomatoes and Green Chilies. Cut ripe avocados in half and scoop them out, transferring the insides into a big bowl. In another big bowl, add the canned corn, minced garlic, cumin, canned black beans, cooked bacon bits and purple onion. Place your avocado in a blender with the fresh lime juice, salt and pepper and puree until smooth. Add it to the bowl with the other ingredients and stir together.

Slice orange bell peppers thinly to look like spider legs. Fill the hollowed out avocado shells with the mixture, add eight bell pepper legs (I had to trim mine a little so they would fit nicely), two olive slices for the eyes and get dipping!

Ingredients
  

  • 7 Ripe Avocados
  • 2 cans 10 oz. each Ro*tel original, drained well
  • 1/2 can 7.5 oz. Great Value Sweet Corn, drained
  • 1/2 can 7.5 oz. Great Value Black Beans, rinsed and drained
  • 2 tsp. minced garlic
  • 1 tsp. cumin
  • 3 Tbsp. fresh lime juice
  • 1/2 tsp. salt
  • pinch of pepper
  • 6 slice bacon cooked and crumbled
  • 1/4 c. diced purple onion
  • Orange Bell Peppers about 3-4 for spider legs
  • Black olives for eyes

Instructions
 

  • Slice avocados in half and scoop the insides into a bowl, discarding the pit. Keep the avocado shells.
  • Place avocados in a blender with lime juice, salt and pepper and blend until smooth.
  • In a separate bowl, stir together Ro*tel, corn, black beans, minced garlic and cumin, cooked and crumbled bacon and diced purple onion. Stir in pureed avocados. Scoop mixture into emptied avocado halves.
  • Cut bell peppers in half, remove the stem and center, then slice them thinly to create spider legs. Trim, as necessary. Place four on each side of the filled avocados. Slice olives and place two in the front for the spider's eyes. Serve with tortilla chips.
