I was at Kneader’s Cafe in Utah about a year ago and I got to try one of their limited time only desserts-a special Chocolate Chip Cookie with crunchy pretzels, dark chocolate chips, toffee bits, and milk chocolate chips. I was in awe at how tasty they were! Since they were only around for a few months and that definitely was not long enough to satiate my cravings, I decided to make my own version. This way, I can enjoy them anytime I want! And now, so can you! Everyone wins!
Lately when I make my favorite chocolate chip cookies, I use multiple varieties of chocolate chips to give it that added flavor depth, richness, and interest. It really takes them up a notch or ten! Everyone who tries these cookies asks for the recipe and comments on how incredible they are. They are the perfect blend of chewy with a slightly crunchy outer shell. Today’s recipe is mostly like my favorite recipe with a few exciting modifications. First, it includes baking powder, instead of just baking soda. Baking powder in baked goods creates a fluffier cookie texture and thus helps the cookie to not spread out flat. I got the idea to add a little baking powder to my cookies from Joy. Food. The next change from my classic favorite chocolate chip cookie recipe is that there are no semi-sweet chocolate chips, but instead there are milk chocolate chips, dark chocolate chips, pretzel pieces and toffee bits. The toffee bits sort of melt and meld into the cookie to create these little surprise “sweet pockets” of amazingness. The coarsely-chopped pretzels are the perfect balance of salty to all the sweet. With all of these delicious characteristics, I don’t see how you couldn’t love these cookies! You’ll instantly fall head-over-heels for them!

Yields About 26 cookies

Ingredients
- 1 c. salted butter, softened
- 1 c. light brown sugar, packed
- 3/4 c. granulated sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 3 c. all-purpose flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1/2 c. milk chocolate chips
- 1/2 c. dark chocolate chips
- 1/2 c. toffee baking bits
- 1/3 c. chopped pretzels
Instructions
- Preheat the oven to 375 degrees Fahrenheit and line baking mats with nonstick liners or spray lightly with nonstick baking spray.
- In the bowl of an electric mixer, cream together softened butter, light brown sugar and granulated sugar until the mixture lightens in color. Scrape down the sides of the bowl in between mixing.
- Add eggs and vanilla and continue to cream together, scraping down the sides of the bowl in between, for a few minutes until the mixture lightens in color.
- In a separate bowl, whisk together flour, salt, baking soda and baking powder. Add this dry mixture to the wet mixture and mix just until combined.
- Stir in the milk chocolate chips and dark chocolate chips, toffee bits and pretzel pieces by hand.
- Form the dough into balls (2-3 Tbsp. of dough each) and place at least 2" apart on prepared baking sheets. Slightly press the dough balls down with the palm of your hand so they will spread easier.
- Bake for 8-10 minutes, or just until they are starting to turn slightly golden brown. Be careful to not overbake.
- Allow them to cool on the cookie sheets for about 5 minutes before carefully removing them to a cooling rack to cool completely. Once completely cool, store in an airtight container to preserve freshness.
