With Easter last week, I prepared a special dinner on Sunday. I always look forward to Easter Sunday! I sent the kids on a little hunt for eggs around our property. And they woke up to filled baskets that morning. It’s always such a memorable day!
I’ve still been sticking with easy meals that don’t require too many ingredients. I’m cooking from my cupboards and pantry as much as possible to avoid extra trips to the grocery store. Actually, I’m trying to go to the store only every 2-3 weeks. Of course I have to make a milk run here and there in between, but I’m really limiting my bulk grocery shopping right now.
We are eating well and enjoying our evening meals together! I think with the current situation, cooking at home is happening more than ever! It’s so great!
Here’s what we ate for dinner late week:
Buttermilk Pancakes. These really are the best! My family begs for them! They are a little more work than typical breakfast foods, so this makes a perfect dinner!
Chicken Bundles. This is a new recipe that I experimented with last week and my family LOVED it! We will definitely be enjoying these again!
Instant Pot Mac and Cheese. This is our most favorite mac and cheese! It’s so easy to make, if you have an Instant Pot.
Cheesy Ham and Rice Casserole. I needed a fuss-free dinner option for a Saturday night meal when I didn’t feel like cooking. This was just the thing! It uses pre-packaged rice mixes and then just a few other simple ingredients. If you don’t have broccoli, you can sub in frozen or canned veggies.
Baked Ham, Cheesy Funeral Potatoes, Homemade Dinner Rolls, and spring-shaped cutout Sugar Cookies. This was our special Easter dinner. It was so delicious!
