Happy-Go-Lucky Fruit Parfaits

Brighten your day with a Happy-Go-Lucky Fruit Parfait! It’s so colorful, fun and yummy!

My 11-year-old daughter and I recently had a fun mommy/daughter date at home! We don’t get to spend enough time one-on-one together, since she has three other siblings competing for my attention. 🙂 Being the oldest has its perks, but its challenges too!

So, whenever possible, I like to squeeze in a “Spirit Riding Free“-watching session with her, complete with yummy refreshments! She’s crazy about this Netflix show. Have you seen it? We’ve watched all the seasons! It’s so cute and has the greatest messages for girls, including friendship, loyalty, and positive self-esteem.

Of course our date wouldn’t have been complete without some delicious and pretty treats! I love all the colorful layers! Since Lucky is our favorite character on the show, we decided to call these the “Happy-Go-Lucky Fruit Parfaits”. 🙂

These are so easy to put together and are the perfect way to snack while watching “Spirit Riding Free”!

If you haven’t seen the show, I’ll give you a quick run-down to catch you up. Lucky is an energetic, free-spirited girl who moves from the city to the country where she makes friends and frees a wild mustang that she names Spirit. She goes on exciting adventures with her friends on horseback, helping others and learning important things about herself along the way.

To create the beautiful, scrumptious layers in the fruit parfait, you’ll need the following ingredients that you can find easily at your local Walmart:

  • Eggo 10CT Strawberry Waffles
  • Reddi-Wip 6.5 oz
  • Diced, fresh pineapple
  • Mandarin Oranges
  • Diced, fresh strawberries
  • Lemon Yogurt
  • Slivered Almonds for topping

We love Eggo waffles because they are warm, fluffy and so delicious! Plus, they toast up to a perfect golden crisp in just minutes, so we can enjoy them in a hurry without much thought or preparation! Today we paired them with fruit and yogurt and the combo is nothing short of dreamy!

We just had to finish this gorgeous dessert off with some Reddi-Wip because it’s our favorite! It uses the best dairy cream in original flavors with less hydrogenated oils than other frozen whipped toppings, because real cream is a top priority!

Ingredients

  • Eggo Strawberry Waffles, 10 ct, toasted
  • Reddi-Wip 6.5 oz
  • Mandarin oranges, drained
  • Fresh Strawberries, sliced
  • Fresh Pineapple, diced
  • Lemon Yogurt
  • Slivered Almonds for topping

Instructions

  1. In a 16 oz. glass jar, layer the fruit, yogurt, and toasted Eggo waffles in whatever order you'd like, repeating layers as desired.
  2. Finish it off with a nice helping of Reddi-Wip on top and sprinkle with slivered almonds. Enjoy!

As you can see, my daughter thoroughly enjoyed it. 🙂 We talked, ate, and laughed while catching up on some “Spirit Riding Free” episodes. I truly believe that these experiences are a great way to bond with kids while creating fun memories to last a lifetime!

    Sounds like such a cute show! My niece watches it, and I bet my daughter would like it, too! AND YUMMY! Those parfaits look divine!
