Blueberry Cheesecake Cookie Bars

These Blueberry Cheesecake Cookie Bars taste like a delicious blueberry muffin in cookie form! The cream cheese makes them super soft and the white chocolate chips add the perfect finishing touch!

Today my cookie obsession continues with some delightful Blueberry Cheesecake Cookie Bars! These were inspired by my Berry Cheesecake Cookies that I shared a few years back. They’re so easy to make, as they start with some berry muffin mixes! You can mix it up and use any kind of berry muffin mix, as long as the ounces match up. I used blueberry because that’s what my grocery pickup gave me as a substitute when they were out of the mixed berry variety.  I wasn’t about to go to another store, so that’s what I went with. 🙂

If you love blueberry muffins and cookies, you’re going to love these! Except they’re so much simpler than making cookies because you just have to press the dough into the pan rather than roll out the balls. Winning!

My kids went wild for these! I’m pretty sure you’re going to love them too! If you’ve been following this blog for any amount of time, you’ll know that I’m a huge fan of cookie bars. The simplicity and deliciousness just can’t be beat! I’ve shared all kinds of cookie bars recipes in the past, but some of my most favorites are these Funfetti Sugar Cookie Bars, these Death by Chocolate Cookie Bars, and these Raspberry White Chocolate Cookie Bars. I think it’s safe to say I’m obsessed with cookies in bar form! 🙂

The weather’s warming up and I’m gearing up for BBQ and picnic season! How about you? These are so perfect for sharing at potlucks and gatherings! You’ll hook everyone at bite one! These are sure to become a favorite cookie treat!

Makes a 9"x13" pan (about 16 bars)

Blueberry Cheesecake Cookie Bars

Ingredients

  • 4 oz. cream cheese, softened
  • 2 Berry Muffin Mixes (6.5 oz. each) I used blueberry, but you can use strawberry, raspberry or triple Berry
  • 2 large eggs
  • 1/2 c. butter, softened
  • 1/2 c. brown sugar, packed
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. baking soda
  • 3/4 c. all-purpose flour
  • 1 c. white chocolate chips, plus more for topping, if desired

Instructions

  1. Line a 9x13" pan with parchment paper so it hangs over the edges. Preheat the oven to 350 degrees Fahrenheit.
  2. Place all ingredients, except white chocolate chips, in the bowl of an electric mixer and mix until combined, scraping down the sides as you go. Quickly mix in white chocolate chips.
  3. Press/spread dough into prepare pan, press additional white chocolate chips on the top (if desired) and bake for approximately 18-20 minutes or just until set. Allow it to cool completely on a cooling rack, then use the parchment paper to carefully lift it from the pan. Slice into bars and enjoy.
